The restoration of a dilapidated building with historical value was a childhood dream for the Czech architect Pavel Prouza, which he developed during family tours of old monuments.
Next month, he will receive a major European heritage award in Venice for the renovation of a sprawling abandoned brewery on the brink of total destruction.
The Renaissance site in Lobč, a village north of Prague, is now producing beer again after the architect and his wife put all their money into a high-risk investment.
With an annual production of nearly 100,000 liters of beer, the brewery looks set to thrive in a country known for its love of beer.
With an annual beer consumption of 139 liters per capita, the Czech Republic is at the top of the world rankings, and hundreds of small breweries have been established in recent decades.
When the couple came across the dilapidated brewery in 2007 and bought it, "it wasn't nice or cozy at all," 46-year-old Prouza told AFP.
"There was an atmosphere of ruin and decay," he added.
In its heyday at the beginning of the 20th century, the several hundred-year-old brewery produced over a million liters of beer a year.
It flourished until the Second World War, but after the Communist takeover, it was nationalized and turned into a production warehouse, a garage for tractors, workshops and apartments.
The area fell into disrepair, changed hands several times after communism, and its owners used it as building material.
The squatters finished the job, burning the floorboards and treating some spaces like a toilet.
"Only two water tanks were preserved because they were too big to take away," Prouza said.
Using their savings, bank loans and subsidies from local authorities and the EU, the couple began to reconstruct.
"The first phase was the hardest, the task seemed too big," Prouza said.
In 2014, while looking for a major investment, they decided to sell their apartment in Prague and move to Lobče.
A year later, they finally opened a brewery and a restaurant.
"The brewery has been making money for eight years. We didn't need any subsidies this year," said Prouza.
Their master brewer – a local enthusiast – makes standard bottom-fermented lager, but also ales, stouts and even groat beer flavored with herbs grown in the village garden.
A favorite place for cyclists, the brewery offers tours of Prouza and also serves as a venue for concerts and exhibitions.
Lobec Brewery is one of 30 heritage projects that won the European Heritage / Europa Nostra award this year.
Its organizers described the "courageous" project as "an example of successful project management with limited financial resources."
"The revival of the brewery has brought life back to the village... (which) is thriving socially."
Mayor Zuzana Pavlíková Šimonková said that the brewery inspired some neighbors to renovate their homes
"It's a kind of motivation and we have to admire what the Prouzes have achieved," she told AFP.
Pavel Prouza describes himself as a "leader, guide, gardener, maintenance man and cleaner" in the brewery - a craftsman always on standby.
The couple, who have three children, have now focused on further remodeling the historic villa.
"That's what we're trained to do and what we're supposed to do," Prouza said. "Save the old houses, not haggle with the cook and collect the plates and serve the beer. And I think we can do that."
